The Aquaglide Cirrus 110 is an incredibly lightweight one person inflatable kayak, weighing just 6kg. The secret to its light weight is the use of TPU material, which can be much thinner for the same strength/durability than PVC (which is what most inflatables are made from). Because of this the Aquaglide Cirrus 110 also rolls up much smaller than most inflatable kayaks, making it super-easy to transport and store. It does cost more than, for example, the Aquaglide Chelan 120 (another one person kayak), but if you place a high priority on lightness a Cirrus is the solution.
